My mind went skipping off happily in a direction that led me, eventually, to add three new desserts to the menu I am building for my restaurant. This is a process I've been working on for a while, and I know I'll have my recipes, trusted, tasted, tested, perfected and all mine, well in place by the time I'm ready to open my doors. Opening a restaurant is a daunting prospect, but I figure if I have a well thought out plan in place my odds of success will increase dramatically. That's what I figure. And anyone who know me will also attest to the fact that I rarely stick to the plan. Oh, well. At least I have one.
After that little mental journey, my mind went back to nachos. Hmmmm.....I'd been planning on chili for dinner anyway. Nachos would give it just a little twist. Something new and different is always good. Then I took a cerebral side trip to a conversation I'd had recently with a fellow transplant from the west during which we'd bemoaned Ohio's complete lack of decent Mexican food. (Ohioans know Italian and do it well, but on Mexican, and Chinese, for that matter, they're clueless. Sorry, but them's the facts.) I thought of Los Gallos in North Lima, and how my favorite thing about them is that they serve a delicious, creamy coleslaw with their chips and salsa. Eureka!
The result was a dinner of nachos made with homemade chili, a sprinkling of cheese, and topped with my own attempt at their great coleslaw. I came pretty close, I think. I took fat-free mayo, because I had bought it by mistake once and now try and hide it in whatever I can, sour cream, a little bit of olive oil, apple cider vinegar, sugar, and freshly ground black pepper. It worked out perfectly. It cooled the heat from the chili, added even more veggies to the dish, and provided a nice extra layer of flavor to supper. Though The Boy refused to add the slaw, The Man and I both thoroughly enjoyed it.
See what I mean about the way my mind works? I had no intention of lecturing on the dangers of salad dressing, but I led myself there with one innocent little mayo reference. Sorry. The point of this post, I think, was to talk about creating new things. I think. No matter.....I've filled another page with my mental wanderings. And now I've moved on to dinner tonight. Wonder what's in the freezer?
